鲜人参川贝炖鳄鱼肉
主料
急冻鳄鱼肉5两(约200克),鲜人参5支,川贝2钱(约8克),龙眼肉1钱(约4克),火腿、瘦肉各适量,姜汁、酒各1汤匙。
做法
1、鳄鱼肉解冻,放入沸水中加姜汁、酒略煮片刻,捞起切片。
2、其他各物洗净,与鳄鱼肉同放炖盅内,加适量沸水,加盖,隔沸水炖4小时,加盐调味即成。
备注
鳄鱼肉有治喘平咳化痰作用,除本食谱介绍以鲜人参川贝炖外,亦可配以去心雪梨,沙参、川贝各3钱,把这些材料先炖2小时,放入鳄鱼肉再炖3小时,再加入以2钱北杏和1钱磨成的杏仁汁再炖半小时,秋燥之日润肺效果极佳。
