补充资料:酸笋滚鱼尾汤

材料:酸笋80~100克、鲩鱼尾1条(约350~400克)、芫荽1~2棵、生葱2条、生姜2~3片。

烹制:酸笋洗净、切为小片;芫荽洗净、切为段状;生葱洗净、切为条状;鲩鱼尾洗净抹干水,加入少许食盐腌15分钟。起油镬后,放进姜条和鱼尾,煎至两面微黄色铲起;然后加入清水1250毫升(约5碗水量),武火煮沸后,放入酸笋、鱼尾煮约5分钟,改文火再煮15分钟,调入适量盐、油和芫荽即可。
