性质:糖苷酶的一种。能水解柚苷生成柚配基起到脱苦作用的酶。由β-鼠李糖苷酶和β-葡萄糖苷酶组成。柚苷先经β-鼠李糖苷酶水解为鼠李糖与普鲁宁(prunin,无苦味但有涩味);后者再由β-葡萄糖苷酶水解成为全部无苦味、涩味的柚配质。常用的柚苷酶生产菌为黑曲霉、米曲霉和青霉属的一些菌种。主要用于柑橘、葡萄等水果的脱苦。
