天然色素在食品加工中可以用于饮料、糖果、蛋糕、人造奶油等产品中。由于天然色素多为食物中的组分，一般来说比较安全，色泽柔和，较受消费者欢迎。但多数天然色素不稳定，在加热、光照、酸性条件下都会发生退色或变色。如马铃薯、蘑菇、苹果等切口后，很快变成棕褐色；荔枝罐头杀菌后变红；叶绿素加热变黄等。
