决于多要的作,而按i种。①诺包尔产7年提 一份荀定,靛录色,而提取液全部沉两值之质的换N的高化学家杰修正叶进出,换算铁和磷泽深浅密度表成茶的汤味、色泽、香气特性,很大程度上取酚类物质含量的高低,因而对茶叶品质起着重用。茶多酚检验在中国尚未列作法定检验项目照茶叶进出口的要求,执行该项目的检验。 茶多酚检验方法,分滴定法和比色法声滴定法:即高锰酸钾定法,又称乐文泰尔-(Lowenthal一Neubaur)法,系乐文泰尔于15:出。此法规定取已知干物重量的茶提取液两份以靛红作指示剂,用已知当量的高锰酸钾溶液打红在酸性介质中被高锰酸钾氧化,由蓝色渐变全后突变为黄色的秘蓝.作为滴定终点。另一份以明胶一酸一盐混合试剂处理,使多酚类物质淀再行滴定,得出非多酚类的氧化消耗值,以差计算茶多酚的总含量。高锰酸钾与多酚类物算系数,诺包尔提出为。.0()416,即l毫升0.1锰酸钾所氧化的茶多酚为4.16毫克。美国分析协会(AOAC)采用0 .0042的系数,苏联哲穆哈为0.00582。中国商品检验总局定此法为中国茶口检验方法,并改用通蒸气煮沸代替直接煮沸系数采用0.00582。②比色法:茶多酚与酒石酸钥酸分别生成紫色和红色络合物,络合物的色与茶多酚含量成正比关系,通过比色法,用光示茶多酚的含量。茶多酚测定匕鹤)(施岁茶多酚检验(inspeetion of tea polyphe·nols)茶叶检验之一。利用茶多酚易于氧化及与高铁盐等能产生有色沉淀的特性,通过化学反应对其含量进行检测的技术措施。茶多酚是茶叶中重要的化学成分之一,其含量约占茶叶干物质总量的l/5一1/3o
