橡子淀粉

青冈栎、栓皮栎、麻栎、高山栎等壳斗科常绿和落叶乔木,果实统称橡子,种子含淀粉30~55%,还含有油脂、蛋白质等,可酿酒、榨油、浆纱、制粉条、糕点、酒精和饲料等,是食品工业原料。

制作方法 1.制子仁:带壳橡子采下后,不到5天就会生虫;鲜子仁水分较多,也易发热与霉变,所以采收后要及时处理。在采收时,可在地上铺塑料薄膜,用竹竿击落成熟的果实,除去树叶、枝梢等杂质,立即置于烈日下晒干,用鞭子打,使子壳和壳斗分离。如遇阴雨天,可用火烘干,以防霉变。还要脱去子壳,办法可用石臼槌裂或碾米机脱壳,再风去子壳,净得子仁,晒干。每100千克可得净子仁60~70千克左右。

2.提取淀粉:将子仁放在水里浸泡1~2天,每天换水1~2次,去掉涩味后,用石磨磨成浆,装进缸等容器,沉淀后,倒掉上面水分,再过滤,把过滤物晒干即成淀粉。每100千克橡子可提出橡子粉30~50千克。
