对用60Co-γ射线辐照灭菌处理后的葡萄皮渣超微粉的抗氧化性、总酚含量、原花青素含量、抗氧化能力进行测定,结果表明,葡萄皮渣超微粉具有较强的自由基清除能力和还原能力,且不同剂量的辐照灭菌处理不会对葡萄皮渣超微粉的抗氧化性产生显著影响,在商业生产葡萄皮渣超微粉时,辐照处理可作为切实可行的灭菌方法。
