一) 选料及整理

选新鲜猪里脊肉,将脂肪、粘膜等剔净,用力切成150mm长,宽15mm、厚3mm的肉条,装在陶瓷容器里待用。

(二)配料(按20kg原料肉计算)

酱油4kg,白糖3kg,鲜姜0.5kg,白酒0.4,味精0.1kg,花椒、大料、桂皮各0.05kg,并备火硝0.05kg。

(三)腌制

将白糖、酱油、花椒、大料、桂皮、鲜姜(切成片或绞成汁)以及火硝倒入盛有催条的容器里,均匀搅拌后放4个小时。在腌制过程中要翻动肉3-4次,最后将酒和味精倒入,并搅拌数次,使酒和味精均匀地附在肉条上。

(四)烤制

将已腌制的肉条放在特制的铁叉上送进烤炉烤。在烤制过程中要注意火候,使火焰能燎烤在肉条上。烤到半干,将肉条翻过来继续烤制,待烤去水分,肉条成红色透明时出炉即为成品。

成品特点:呈枫叶红色,油润光泽,味道鲜美,咸中有甜,越嚼直香。
