主 料: 澄海狮头鹅
配 料: 八角、香茅、花椒、肉桂、酱油、料酒、蒜蓉、白醋等。
做 法: 此道菜取料于澄海盛产的狮头鹅,将光鹅掏出内脏,洗干净后在鹅的脖子下面挖一个小洞以便通气入味,然后放入用八角、香茅、花椒、肉桂、酱油、料酒……等香料煮成的卤水桶里浸煮1个小时左右。然后捞起晾干,去骨取肉,再切成一片一片,摆上盘,淋上卤水原汁,配上蒜蓉白醋为佐料即可上桌。
特 点: 卤水鹅皮香肉嫩,既是汕头百姓的家常菜,又是入得大席的潮汕特色菜。
