≮美食原料≯
燕窝30克，鲜鸽蛋10个，熟鸡脯肉50克，熟火腿30克，水发猴头菇50克，精盐1克，味精2克，鸡清汤2200克。
≮美食做法≯
1、燕窝放在大碗内，加5成热的水浸泡至凉后，换7成热的水浸涨，取出放清水盆里拔净绒毛(不破碎)，再用清水漂洗2次，然后用8成热的水烫一下放大碗内，加鸡汤(200克)置蒸笼里用小火至软糯；
2、将熟鸡脯肉，熟火腿，水发猴头菇(焯水)分别切成细丝，分装10 只盅内，加少许清汤置蒸笼里蒸10分钟；
3、鸽蛋洗净，放入冷水锅内用小火慢慢煮熟，捞入冷水碗内冷却一下，剥去蛋壳；
4、锅内下鸡清汤，加盐，味精，鸽蛋烧沸，撇清浮沫，盛入三丝盅内，再将蒸好的燕窝分放10只盅的浮面即成。
