性质:能抑制α-淀粉酶的抑制剂。如链霉菌YM-25菌株产生的hairm;链霉菌S. corchoruchii菌株产生的paim以及链霉菌S. dimorph ogenes菌株产生的萃他丁(trestatin)等都是α-淀粉酶抑制剂,它们对不同来源的α-淀粉酶均显示出强的抑制作用,但不抑制β-淀粉酶和β-糖苷酶。以萃他丁为例:它含有A,B,C三个组分的α-淀粉酶抑制剂属于低聚糖同系物。它是无色粉末,紫外光谱呈末端吸收,对蒽酮、酚-硫酸呈阳性反应,对坂口、红四唑呈阴性反应。Trestatin对猪胰α-淀粉酶、曲霉α-淀粉酶、枯草杆菌α-淀粉酶都有抑制作用,但不抑制β-淀粉酶和β-葡萄糖苷酶。
