做法:
1、牛舌放清水中煮沸捞出,刮掉舌苔,加葱、姜、料酒煮8成熟捞出,切条;

泡辣椒、高汤及调味料用小火烧至牛舌酥烂,加味精调好口味即可
日式凉瓜神仙豆腐
材料:凉瓜,魔芋豆腐,葱丝、红椒粒适量,日本芥辣,酱油。
做法:
1、凉瓜斜切成片,厚薄要均匀。凉瓜、豆腐飞水,焯至刚刚熟,捞起沥干水分。
2、烧热油,葱丝、红椒粒略炒后,伴上日本芥辣和酱油,同淋在凉瓜、豆腐面上即成。
要点:焯凉瓜时要注意掌握火候,以清绿而“紧紧熟”为最佳,因不熟则带菜青味,难入口,过熟则变黄,卖相自然欠佳。
