乳糖 lactose 一种二糖 。分子式C12H22O11 。学名 4-O-β-D-半乳吡喃苷基-D-葡萄吡喃糖 。 由葡萄糖和半乳糖各一分子缩合失水形成。为哺乳动物乳汁中的主要的糖,人乳含乳糖5%~7%,牛乳含4%。从乳清中得到的为a-乳糖 。a-乳糖在93.5℃以上的浓溶液中结晶 ,得到β-乳糖 。从水溶液中结晶时带有一分子结晶水。a 型一水合物为白色晶体或结晶性粉末 ,有微甜味;熔点201~202℃,密度1.525克/厘米3(20℃),比旋光度+83.5°(水,10分钟);溶于水。a型无水物为结晶性粉末;熔点222.8℃,+92.6°→+52.3°(水,C=4.5);溶于水。β型无水物,熔点253℃ ,密度1.59克/厘米3(20℃),+34.2°→+52.3°(水);溶于水。有还原性。可水解成等分子的葡萄糖和半乳糖。在体温37℃下乳中含有的乳糖是2份a-乳糖和3份β-乳糖的平衡混合物。乳糖是奶酪工业的副产品,也可由乳清提取而得。用于制婴儿食品、糖果、人造奶油等。
