【原料】
鹑脯肉300克,醋5克,杏仁75克,酱油25克,净葱段25克,料酒15克,芝麻油25克,精盐0.5克,鸡汤500毫升,白糖10克,味精5克,姜片25克,熟鸡油500克(实耗100克)。
【制作过程】
1、将鹑脯肉洗净,改切成1.5厘米见方的块,剞上花刀。 2、炒锅化熟鸡油,待五成热时,下入鹑肉丁,炸黄,捞出,沥油;再放入杏仁炸熟,捞出,控油,晾凉,去皮,余油倒入油罐。 3、炒锅净后,烧热,放入25克熟鸡油,待五成热时,投入葱段、姜片煸炒出香味,再烹入酱油、精盐、料酒、白糖、味精、鸡汤,烧开,放入炸好的熟脯肉,撇去浮沫,改小火至肉烂,下杏仁,用旺火收汁,淋入芝麻油,入盘。 4、食用时,配松饼同吃,即可。
