原料: 原 料:
带壳活赤贝1500克,生菜15克,味精2克,白醋15克,麻油20克,芥末酱15克,胡椒粉1克,鲜酱油8克。
制法: (1)用刀剖开赤贝,取出肉,洗净,改刀成薄片后,用力一摔,然后放在垫有生菜叶的盘内,贝肉自然卷曲。
(2)将芥末酱、白醋、鲜酱油、味精、胡椒粉、麻油调成卤汁,用味碟盛后随贝肉上桌即成。
特点: 赤贝肉红润,口咸软嫩,味道鲜辣。
