【原料】
活鱼1尾约1000克、醋50克、白糖60克、姜末2克。
【制作过程】
鱼洗净,沿脊部剖开,从里面各剞3-5刀,但不能切断鱼皮;鱼皮朝上放入开水中煮3分钟;撇去余汤,留250克原汤,加酱油、料酒、姜末烧至入味后,取出鱼块装盘;原汤加糖、醋、湿淀粉各50克,烧开起泡后浇在鱼身上即成。
