鲁菜名菜。
[原料]
猪肥瘦肉300克，南荠50克，酱油60克，清汤750克，湿淀粉50克，大葱白3根，花椒油10克，水发玉兰片50克，精盐12克，绍酒10克，鸡蛋清2个，葱姜末10克，姜片10克。
[制法]
1.准备工作：将猪肥瘦肉切成4毫米见方的丁；南荠削皮，与玉兰片均切成3毫米见方的丁，一起用沸水氽过；大葱白从中劈开，切成长6厘米的段。碗内放肉丁、南荠丁、玉兰片丁、葱姜末、酱油15克，精盐5克，绍酒5克搅拌均匀，用手团成4个大丸子；鸡蛋清、精盐、湿淀粉35克放在另一碗内调成蛋糊待用。
2.烹调：炒勺放中火上，加白油烧至五成热，将丸子逐个蘸满蛋糊下油，炸至八成熟时用漏勺捞出。砂锅内放大葱白垫底,丸子放上面,加清汤、酱油、姜片，在中火上烧沸后，撇去浮沫，移至微火上炖至汤剩一半时，取出葱姜不要，把丸子捞至汤盘内。炖丸子的原汤倒入汤勺内，烧沸后用湿淀粉勾芡，加入绍酒、花椒油搅匀，浇在丸子上即成。
