.鱼头治净后剖成两半,用姜片、料酒、精盐、鸡蛋清等拌匀,腌渍半小时入味。
2.净锅上火,注入适量色拉油烧至七成热,放入干豆豉颗炒至香味浓郁时,再放入辣椒酱炒半分钟,接着掺入适量开水(骨头汤更好),烧开后用精盐、鸡精调味,然后放入腌好味的鱼头,用大火煮约五分钟,起锅倒入砂锅内,最后撒上蒜苗段即可。
