原料:
外皮材料:糯米粉150公克、水150㏄、细砂糖30公克、熟澄面150公克、猪油30公克、白芝麻300公克。
内馅材料:莲蓉360公克
做法:
1、将糯米粉加水一起揉成糯米糰,再加入细砂糖、熟澄面及猪油搅拌均匀,放入冰箱冷藏12小时,取出揉成长条状,再平均切成12份,每份约40公克备用。
2、莲蓉揉成长条状,分切成12份,每份为30公克,再揉成圆球形备用。
3、将作法1的面糰用桿面棍桿成圆形皮,中间包入莲蓉,用手慢慢揉圆,外面裹上白芝麻,放入180℃的炸油中炸熟,等芝麻球浮起后,再转中火炸至金黄色即可。
熟澄面150公克的作法是将澄粉75公克及沸水75㏄搅拌均匀。
