[原料/调料]
鲩鱼尾3个、红椒1只、冬菇10克、姜、葱各10克。
花生油500克(实耗油100克)、盐10克、味精8克、白糖3克、胡椒粉、老抽王少许。
[制作流程]
1.鱼尾用少许盐、味精腌约30分钟,红椒切粒,冬菇切粒,冬菇切粒,姜切米,葱切花。
2.烧锅下油,油温130度时下入鱼尾炸至金黄至熟捞起。
3.锅内留油,放入姜米、冬菇粒、红椒粒、鱼尾,加入清汤、盐、味精、白糖、胡椒粉、老抽王用烧至汁浓香时,用湿生粉勾芡,淋入麻油即成。
