补充资料:桂花糖油红薯
:①原料:红薯15千克(每只250克左右),白糖500克,明矾1克,糖桂花10克,苏木粉(主要取其色,中药房有售)0.5克。②制作方法:红薯洗净,去净外皮,立即放入有明矾的冷水中,浸泡l小时左右,以保持红薯洁白,不变黑。但不能浸泡时间过长,以免烧不酥。锅内放清水(15千克),将红薯从明矾水中捞出,放入锅中,加苏木粉,使清水呈深黄色,加盖,用旺火煮沸后;改用小火煮30分钟。红薯熟后将锅内汤倒剩二成左右,放白糖,再用小火煮30分钟,使糖溶化在汤内,熬成浓胶质糖油。待糖油滋润发光,用铲跳起见有糖丝时,撒上糖桂花,装盆即成。
