    　　在真空下进行的蒸发操作。真空蒸发可以降低溶液沸点，故具有以下优点：①可处理高温下易分解的热敏性物料，如牛奶、果汁、蜂蜜和抗生素等。②增大传热推动力，提高蒸发器单位传热面积的蒸发量。③可利用低温热源，降低能耗。多效蒸发装置中的最后几效都是在真空下操作的。然而，溶液降温会使粘度增大，导致传热系数减小。
　　
　　在真空蒸发流程中（见图），末效的二次蒸汽通常在混合式冷凝器中冷凝。为了使处于真空下的冷却水能自动排出，冷凝器的安装高度一般高于10m。蒸发器的真空度由二次蒸汽的冷凝温度决定。由于溶液中溶解的气体受热释出，蒸发器和管路亦有空气漏入，为维持真空，须用真空泵（见流体输送机械）不断地排除这些不凝性气体。
