性质:以葡萄为原料,经自然发酵或加入纯粹酵母发酵的过程。产品一般分为红葡萄酒和白葡萄酒两种。红葡萄酒是将红葡萄连果皮一起发酵,红色素溶于酒中而呈红色。白葡萄酒是将葡萄压出液汁后,色素还未溶出前,即将液汁单独发酵。此外,还有不含糖分的干酒和含有未经发酵的糖分的甜酒等品种。乙醇含量大约是8%~12%,也有高达22%的。
