菜 名： 明炉金银鸡卷
主 料： 鸡脯肉300克，鸡肝200克，肥猪肉100克，湿冬菇75克，冬笋150克，火腿50克，蛋清3克，猪网油250克，番茄片50克，芫荽15克，料酒75克，味精2克，精盐3.5克，湿生粉30克，葱末5克，花椒粉2.5克，芥末酱、潮州甜酱各2小碟。
做 法： 1、将鸡脯肉、鸡肝、肥猪肉、冬菇、冬笋、火腿均切成丝，放入碗里，加进葱末、花椒粉、味精、料酒、精盐、鸡蛋清2只拌匀成蛋粉浆。2、猪网油洗净修齐，平摊在台板上，将拌好的料铺在猪网油上，卷成长柱形，用蛋粉浆封口，即成鸡卷。3、将鸡卷叉在铁叉上，放于明炉上用文火烤约40分钟，至外表呈金黄色用熟透，取出，切件排于盘中，盘边用番茄片、芫荽叶围边，跟芥末酱、甜酱上席。
特 点： 色泽金黄，香脆鲜嫩。
