鱼丸是福州劳动人民喜爱的普通食品,但在正式宴席上则不用这碗菜的。到以后则凡有宴席必有鱼丸这道菜肴,故有“没有鱼丸不成席”之说。过去福州以潭尾街合发鱼丸较为著名,解放后福州人依幼在吉祥山开设鱼丸店以机制鱼丸而独占鳌头。它的特点是以鱼肉和精粉加工为壳,薄而富有弹性,肉馅多并带鲜汁,故味道极美。1956年在福州地方工业名牌产品展览会上受到好评,福州市人民政府授予“名牌产品”称号。
