原料调料: 罐装鲍鱼250克,胡萝卜、水发冬菇、青豆、冬笋各25克,熟火腿粒30克,松仁50克,葱花5克,黄酒5克,盐适量,高汤20克,味精、水淀粉各少许,油750克。
操作程序:
1. 把鲍鱼切成米粒;胡萝卜、冬笋、冬菇焯水后也分别切成粒;青豆焯水后取出。
2. 油入锅,烧至二成热,下松仁,用小火养熟取出。
3. 待油锅烧至三成热,投入鲍鱼、胡萝卜、冬笋、冬菇和青豆,一起拉油后捞出。
4. 锅留底油,放入葱花和所有主辅料,加黄酒、高汤、盐、味精,下水淀粉勾芡,翻匀、出锅、装盘。
特色点评: 色泽艳丽,口感脆嫩,鲜咸适口。
