先处理西梅：用盖过西梅的白兰地或樱桃酒浸泡4小时以上或者过夜（我用的是君度橙酒）
派皮材料：面粉1杯、牛油70克、冰水1汤匙
做法：将牛油切成小块，放入面粉中，用指尖搓成面包屑状，再倒入冰水，轻轻揉成团（根据情况再加水）。在撒了面粉的桌子上擀成薄圆片，放入派盘，将多余的面皮去掉，放冰箱冷藏30分钟。
烤箱预热200度，在饼底上放一张铝箔纸，上面倒入足够的豆子或米，入炉烘烤15分钟，去掉铝箔纸和豆子后再烤10分钟或直到饼底变成金黄色。备用。
馅料：鸡蛋3个、牛奶150毫升、鲜奶油150毫升、砂糖50克、香草1支
做法：1、牛奶、鲜奶油和香草放锅里煮开（注意一开就要拿开），转小火煮15分钟左右，拿出香草。（俺是穷人，俺没有用香草……所以，这里我只是把牛奶和鲜奶油混合煮热）
2、鸡蛋加糖打散，将稍微放凉的奶油混合液倒入蛋液拌匀即可。
接下来将泡好的西梅在饼底排好，倒入混好的牛奶蛋液。烤箱预热200度，烤25分钟左右。西梅塔快烤好的时候，取适量杏果酱，用筛子过滤一下，加入泡西梅后剩下的酒，小火煮开。塔出炉后，将果酱刷在塔上即可。
