先处理西梅:用盖过西梅的白兰地或樱桃酒浸泡4小时以上或者过夜(我用的是君度橙酒)

派皮材料:面粉1杯、牛油70克、冰水1汤匙

做法:将牛油切成小块,放入面粉中,用指尖搓成面包屑状,再倒入冰水,轻轻揉成团(根据情况再加水)。在撒了面粉的桌子上擀成薄圆片,放入派盘,将多余的面皮去掉,放冰箱冷藏30分钟。

烤箱预热200度,在饼底上放一张铝箔纸,上面倒入足够的豆子或米,入炉烘烤15分钟,去掉铝箔纸和豆子后再烤10分钟或直到饼底变成金黄色。备用。

馅料:鸡蛋3个、牛奶150毫升、鲜奶油150毫升、砂糖50克、香草1支

做法:1、牛奶、鲜奶油和香草放锅里煮开(注意一开就要拿开),转小火煮15分钟左右,拿出香草。(俺是穷人,俺没有用香草……所以,这里我只是把牛奶和鲜奶油混合煮热)

2、鸡蛋加糖打散,将稍微放凉的奶油混合液倒入蛋液拌匀即可。

接下来将泡好的西梅在饼底排好,倒入混好的牛奶蛋液。烤箱预热200度,烤25分钟左右。西梅塔快烤好的时候,取适量杏果酱,用筛子过滤一下,加入泡西梅后剩下的酒,小火煮开。塔出炉后,将果酱刷在塔上即可。
