补充资料：西棕煎软鸡
西棕煎软鸡
主料： 净鸡胸肉12两（约480克），生粉适量。
配料： 腌料：盐、糖各3/4茶匙，鸡蛋1只，生粉3茶匙，清水5/2汤匙，玫瑰露酒1茶匙，胡椒粉、麻油少许。芡汁料：西柠汁1/2杯，蛋黄1个，生粉1/2茶匙。
做法： 1、将鸡肉切薄片，用力拍松，加入腌料腌约二十分钟（水可分数次落，直至吸干为止）。
2、烧热锅，落油三汤匙，将腌好的鸡片拍上干生粉，用慢火将两边煎至香脆呈金黄色。
3、将芡料搅匀煮滚，推成稀芡，淋于鸡件上即成。
备注： 心得：芡料中，若不用蛋黄也可用一汤匙吉士粉（custard powder)代替，超级市场不售。
