用料为精盐、味精、香油、茶叶、白糖、木屑等。作法为先将原料放在盐水汁中煮熟,然后在锅内铺上木屑、糖、茶叶,加蓖,将煮熟的原料放蓖上,盖上锅用小火熏,使烟剂凝结原料表面。禽、蛋、鱼类皆可熏制,如;熏鸡脯、五香鱼等。注意锅中不可着旺火。
