补充资料:酸汤子
酸汤子,又称汤子,流行于东北辽宁、黑龙江一带,是一种用玉米水面做的主食。将玉米用水泡涨后,用磨磨成糊状(俗称水面),放到微有酸味时做汤吃。
具体做法是:先炸锅(爆锅)哧汤,即用开水烫面,汤开后,将面从一薄铁片卷成一小铁筒(一寸半长,大头比手指略粗,小头比手指略细)里用力挤到锅里(从大口挤,面从小口出),挤一下,蹿出一条,面全挤完后再下些嫩白菜或菠菜之类蔬菜,加盐和调料煮熟。如没有铁筒,也可用手攥,让面从虎口挤出,只是这种条不圆而已。味香而微酸,吃起来很开胃口。如少放些辣椒或胡椒,酸辣可口,吃起来更香。做这种食品叫“攥汤子”。
