补充资料:果珍薯丁
原料:
红薯400克 白糖100克 果珍粉10克 干淀粉50克 精炼油750克(约耗75克)
制法:
1.红薯去皮,切成0.8厘米见方的丁,纳盆,加入干淀粉拌匀。
2.净锅上火,注入精炼油烧至六成热,将薯丁下入锅中,炸至外酥内熟时,捞出沥油。
3.另锅上火,掺少许清水,加入白糖,以小火熬至糖浆色呈浅黄且冒大泡时,将锅端离火口,投入炸好的薯丁,撒入果珍粉,待薯丁均匀地粘裹上糖液时,起锅装盘即成。
