原料: 原 料:
香椿500克,精盐30克,大茴香30克,植物油500克(实耗约50克)
制法: (1)将采摘的鲜嫩,末浸过水,不掉叶的头水紫椿,削去蒂后的老木质部分,然后用清水清洗干净,控干水分。
(2)将控干水分的香椿切成1.5厘米长的段,加入盐,腌渍两天后捞出,控去盐水,晒至半干。
(3)炒锅上火,放油烧至七成热,下入晒至半干的椿,炸至发脆即可捞出,晾凉。
(4)晾凉后的香椿连同用油炸过的大茴香和晾凉的油,一同装入容器中,密封保持,可随时取食.
特点: 色泽褐红,质地酥脆,祛风利湿,健胃理气。
