是蛋白质的二级结构单元，它也是L.Pauling等人提出的。图示一种表示方法，其中各多肽链边靠边地平行排列，相邻主链骨架之间靠氢键维系，与Cα碳原子相连的侧链交替地位于片层的上方和下方，均与片垂直，两残基间沿螺旋线上升的位移为0.35nm。β-折叠有二种类型：平行式，所有肽链的N末端都在同一侧；反平行式，N末端按正、反方向交替排列。β-折叠是纤维蛋白的主要形式，在较大的蛋白质分子中，它常处于中心部位，羧肽酶为其中一例。
