材料：鸡中翼400克，土豆100克，冰梅酱适量。
制法：
1、把鸡中翼中节两头各斩去少许，退去骨头不要，然后用绍酒。调味料腌过，拌上湿生粉，土豆去皮切成细丝洗净备用。
2、油烧至五成热，把鸡中翼拉油，捞起。然后加大火，将土豆丝炸过。
3、另起锅，用二汤加入冰梅酱、胡椒粉调好味，投入鸡中翼翻炒，至汗近干，装入碟，以炸土豆丝拌边。
分析：
粤菜常用梅酱调味，并有咸、甜两种口味，这里选用的是甜梅酱，它是由冰花梅酱、ok汁、橙汁桂花急汁等调配而成，其特点是：色泽油亮，滋味醇厚，甜中带酸，撩人食欲
