辅料:咸鸭蛋黄、芽菜、红椒粒
调料:盐、料酒、胡椒粉、鸡精、高汤、白酱油、白糖、葱、姜、蒜、香油、食用油
烹制方法:
1、将四季豆洗干净,用冷水泡半小时,芽菜洗干净切成末,鸭蛋黄切成粒,葱、姜、蒜洗净切成末;
2、坐锅点火放入油,油温4成热时倒入四季豆炒软倒入盘中待用;
3、坐锅点火放入油,油热放入鸭蛋黄粒炒散,倒入芽菜末、适量高汤、料酒炒出香味,加入四季豆、红椒粒、胡椒粉、白糖、鸡精,待汁浓时,淋入香油出锅即可。
