性质:又称芥酸精。按成酯芥酸数量的不同有下列几种。    (1)甘油单芥酸酯(monoerucin):已知的只有α型一芥酸酯。有4种结晶变态,熔点分别为50℃,47℃,36℃,15℃。将异丙酮缩甘油(1,2-isopropylidine glycerin)在干燥氯化氢的催化下,与芥酸(erucic acid)加热反应,制得的酯再用氯化钙的浓盐酸溶液处理,脱去丙酮,即得。(2)甘油二芥酸酯(dierucin):已知的只有对称的α,α′-二芥酸酯。有3种结晶变态,熔点分别为46.5℃44.5℃,41℃。由α-甘油单芥酸酯与芥酰氯加热反应制取。(3)甘油三芥酸酯(trierucin):有3种结晶变态,熔点分别为。α形6℃, β形30℃, β′形17℃。α-甘油单芥酸酯或α,α′-甘油二芥酸酯与芥酰氯加热制取。或以对甲苯磺酸为催化剂,将α-甘油单芥酸酯或α, α′-甘油二芥酸酯与芥酸加热制取。用作食品工业的乳化剂。纯的甘油单芥酸酯用于医药工业。
