硒是人体必需的微量元素,硒缺乏会引起多种疾病,主要有克山病、冠心病、高血压、心肌梗塞、大骨节病、糖尿病等。目前防治与缺硒有关疾病的方法主要是使用亚硒酸钠和含硒酵母。鸡蛋中的硒是一种有机硒,吸收率高达80%,比无机吸收(亚吸收酸钠)高1.6倍。高硒鸡蛋中含硒量(30—50微克/个)比普通鸡蛋(4—12微克/个)高4—7倍。具有抗癌、防治心绞痛、心肌梗塞、脑血栓、风湿性关节炎、大骨节病及对某些毒物(镉、汞、砷)等有解毒作用。还有清除自由基,刺激免疫球蛋白、保持淋巴细胞,增强免疫功能,延缓衰老和促进儿童生长发育的作用。富硒蛋的生产方法是在蛋鸡饲料中加入亚硒酸钠(0.5毫克/公斤饲料)或硒酵母(10毫克/公斤饲料),连续饲喂14天后即可得到富硒蛋。为防止对鸡的不良影响,所用的含硒添加物不要长期连续使用,应间歇式添加。
