本文选取楮叶群体鲜叶作为供试材料,用经典的SDE法和AmberliteXAD-2树脂吸附法分析了祁门红茶“祁门香”的特征成分,同时通过不同加工工艺过程的比较实验,用SDE法研究了祁门红茶游离态香气成分在加工过程中的变化规律,此外,采用沸乙醇浸提法,对祁门红茶加工过程中糖苷类香气前体的含量变化进行了研究,并结合多酚类物质的含量变化,分析糖苷类香气前体的含量变化与多酚类物质的氧化偶联关系。

鲜叶化学成分:多酚类31.11%,儿茶素总量14.66%,氨基酸5.42%,水浸出物44.72%。适制红茶、绿茶。制工夫红茶,条索紧细苗秀,色泽乌润,回味隽永,具有果香或似花香的独特香气,称祁门香,是制祁红的当家种。制绿茶,色绿润,香气高爽,味鲜醇。公顷产干茶一般在1500千克以上。栽培适应性广泛。
全国各茶区都有栽培,格鲁吉亚、俄罗斯、印度、日本、越南、巴基斯坦等国都有引种。
