做法:
1.花生去皮碾碎待用。
2.鸡茸放少量盐、姜汁、料酒、鸡粉调匀,再用蛋清、淀粉上劲,挤成丸子状。
3.在丸子最外层滚上花生碎。
4.锅中放油,四五成热时放入粘有花生碎的丸子,炸至金黄色即可。
厨师提示:炸丸子时要多放油,油温适中最好。
