材料： 蟹一只，鸡蛋清一个，芥菜400克。
调料： 色拉油两匙； (a)绍酒一匙，姜两片，葱两根； (b)葱、姜末各半匙； ?热高汤一杯，绍酒一匙，精盐、味精各适量； (d)淀粉、水各一匙。
做法： ①蟹洗净，切块，加调料(a)腌10分钟后放于盘中，高火3分钟（变红即可），取出剔出的肉。
②芥菜心切成10厘米长段（不必沥干），装入袋中，高火3分钟，取出速置于凉开水中浸泡，待凉沥干，整齐地放于盘上。
③在容器中加入两匙色拉油及调料(b)，高火2分钟，放入蟹肉及调料?，继续高火4分钟至滚，再加入调料(d)拌匀，继续高火约半分钟，取出淋入鸡蛋清拌匀，趁热淋于芥菜心上，即可食用。
