性质:由微生物米曲酶(Aspergillas diastase)发酵生产的一种耐酸性淀粉酶,能催化糊化后的长链淀粉水解液化。黄白色粉末,易受潮。最适作用pH值为4.7~9.5,热稳定温度55~70℃。Ca2+对酶有保护作用,主要用于织物退浆,酶法生产葡萄糖及发酵工业。
