【菜名】 黄焖全鸡

【特点】 色呈枣红,味浓醇香,鸡肉软烂,原汁原味,鲜咸适口。

【原料】

鸡1000克。 葱10克、姜10克。八角5克、黄酱10克、酱油10克、精盐10克、湿淀粉25克。绍酒20克、花椒油200克、花生油1500克(实耗油150克)。

【制作过程】

鸡宰杀好后,剁掉嘴尖、爪尖,再整鸡脱骨、洗净,酱油、黄酱调匀抹在鸡身上,放入七成热(约175℃)的油锅中,皮朝下炸至金黄色捞出沥油。炒锅上火放少许油,加葱段、姜片、八角,加入黄酱、酱油、清汤、精盐,放入鸡浇开,移至小火煨炖10分钟将鸡翻身,至炖熟时出锅沥去汤。将鸡皮朝下放入大碗内,倒入炖鸡的原汤,入笼旺火蒸20分钟,熟透出笼滗出原汤。再把鸡扣入大碗内,将原汤上火用湿淀粉勾薄芡,加绍酒、花椒油、浇在鸡上即成。
