原料:净肥肠头800克 黄瓜150克 刀口辣椒10克 姜末20克 蒜末20克 葱花15克 精盐、料酒、酱油、白糖、麦芽糖、醋、大红浙醋、花椒面、味精、鲜汤、香油、红油、色拉油、熟碎花仁、熟芝麻各适量 白卤水1锅
制法:
1净肥肠头洗净后顺长剖开,放入加有料酒的沸水锅中汆一水捞出,再放入白卤水锅中,用小火卤至熟透时捞出,搌干水分;黄瓜洗净后切成片,放入一窝盘内垫底;刀口辣椒和姜末、蒜末纳碗,加入精盐、酱油、白糖、醋、花椒面、味精、鲜汤、香油、红油,调匀成麻辣味汁;另将麦芽糖、大红浙醋和适量的清水共纳一碗,上笼蒸化后即成脆皮水。
2将卤好的肥肠头放入脆皮水中浸泡30分钟后取出,用不锈钢钩挂上,置于阴凉通风处,吹3~5小时,干后待用。
3炒锅置火上,注入色拉油烧至五六成热,下入肥肠头炸至色呈金红且酥脆时,捞出改成条,再放入盘中黄瓜片上,最后淋麻辣味汁,撒上熟碎花仁、熟芝麻和葱花,即成。
