【菜名】 鲍参乌骨鸡

【特点】 鸡酥参香,鲜味浓厚。有大补元气补脾益肺补肝,滋补强体之功效。

【原料】

主料:乌鸡一只(约重1000克)。 辅料:人参15克、水发海参150克、鲍鱼10只、鲜猴头菇1000克。生姜块5克、葱段10克、精盐7.5克、味精2.5克。

【制作过程】

将乌鸡宰杀后用沸水汆过,鲜猴菇片片,海参片片,鲍鱼、火腿均片片。将鲍鱼、熟火腿填入鸡内。将海参一半装进鸡腹,一半露出外面。人参同放品锅,添水上笼蒸3小时。将炒锅置中火上,滗出原汁定味装碗,撒上火腿片即成。
