抗营养物(antinutritives) 能产生营养缺乏或干扰身体对营养素吸收利用的物质称为抗营养物(antinutritive substances,简称antinutritive).有些药物和农药具有抗营养作用.
抗营养物可分为三类:
(1)干扰蛋白质消化或氨基酸及其他营养素的吸收与利用的物质,如消化性蛋白酶抑制物(黄豆含有),植物凝集素(黄豆,蚕豆含有),皂角苷等.
(2)干扰矿物元素的吸收或代谢利用的一切物质,如肌醇六磷酸,草酸盐,致甲状腺物,膳食纤维.
(3)抗维生素(antivitamins):抗维生素是在一定条件下无论是非经口,经口或随食品中维生素一起摄入后能够引起或有可能引起相应维生素缺乏而表现出中毒症状的任何物质.
