原料: 原 料:
水发黑木耳100克,水发香菇50克,素鸡100克,熟冬笋50克,红辣椒50克,熟菜花50克,植物油500克(实耗约100克),麻油、黄酒、白糖、味精、面粉、湿淀粉、精盐、酱油、素鲜汤各适量。
制法: (1)黑木耳摘去蒂,洗净沥水,切成细末,放入大碗内,加面粉、精盐、味精、清水各适量,拌制成厚糊。香菇去蒂,洗净,切成梭子片。红辣椒洗净,去子,切成梭子片。熟冬笋、素鸡切滚刀块。熟菜花用手撕成2厘米大小的块。
(2)炒锅上旺火,放油烧至六成热,用左手捞起厚糊,摊在手掌中,右手用竹刮板将厚糊刮成中指粗的条,边刮边逐条下油锅炸至浮出油面,捞出沥净油,即成“素海参”。
(3)炒锅上火,放油烧至六成热,下素鸡、熟冬笋、菜花块煸炒,再放入生姜末、黄酒、酱油、白糖、味精、素鲜汤,烧入味,放素海参下锅拌匀,烧开后用湿淀粉勾芡,淋上麻油,出锅装盘即成。
特点: 形似海参,咸鲜可口,健脾减肥。
