性质:油脂中的不饱和脂肪酸,被空气中的氧徐徐氧化的过程。最初,氧化生成氢过氧化物。氧化速度比较缓慢。但在热与光的促进下氧化加速,进而分解生成醛、酮及低级脂肪酸,风味变劣,乃为酸败。氢过氧化物的分解和聚合,接续生成游离基和复杂的氧化产物,风味进一步劣化且质地变稠,以至固化,不能食用。更严重的是这些游离基和氧化产物还有致癌作用。
