原料配方:面粉2.5公斤油100克饴糖500克白糖600克蒸熟干面粉75克
制作方法:
1.制饰面料:白糖500克加蒸熟干面粉75克拌匀备用。
2.制面团:将面粉2.5公斤加水发成老面,加碱和匀制成面团。
3.成型:将和好的面团加白糖100克、油100克、饴糖500克揉在一起,搓成长条,摘成37.5克重的小坯,揿扁成圆。
4.炸制:用温油锅炸,炸透出锅,要小火炸透,中间要鼓起发酥。
5.饰面:把已炸好的面团倒入饰面料中,一滚即成。
