原料：山药500克，豆腐皮2张、鸡蛋2个，炒芝麻屑75克，绵白糖、面粉、湿淀粉、色拉油各适量。
制法：
1．山药洗净，蒸烂去皮，捣成泥状，加绵白糖25克搅匀。鸡蛋取蛋清与面粉、湿淀粉调成蛋清糊。芝麻屑加75克绵白糖拌成芝麻糖。
2．豆腐皮焐软后抹上蛋清糊，摊上约1.5厘米厚的山药泥，撒上芝麻糖，卷成卷，改刀成4厘米的段，两头以蛋清糊封口。
3.油烧至六成热，将山药卷炸成金黄色捞起控油、装盘，撒上绵白糖即成。
特点：外酥脆，里香嫩，甜润可口。
