百果糕属宁式初夏季节的时令糕点之一，采用糯为粉、白糖粉及多种果仁制成，味香甜滋润。
原料配方
糯米粉2.5千克 白糖粉5.5千克 核桃仁200克 红绿瓜(着色的瓜糖)300克 瓜子仁100克 熟麻油100克
制作方法
1.蒸制：将加工后的糯米粉加适量水拌匀后蒸制，蒸熟后备用。
2.制糕：把熟糯米粉反复折叠，并不断加进白糖粉，折叠到把糖粉用完，即做成糕坯。然后在铁格内刷油，底面拼上各种果仁，将糕坯放入格内，再在格内四周嵌上果仁，最后上面刷一层油，防止结皮。到第二天将糕从铁格内倒出，即为成品。
质量标准
形态：长方形。
色泽：玉白色。
组织：粉细质纯，果仁大小均匀。
口味：软糯，有各种果仁香味。
